Lightly Grilled: Caezar Cheung, D-Fusion

Sat next door to the Grand Theatre on the vibrant Upper Briggate, D-Fusion is a restaurant, bar, karaoke bar and club. We spoke to the bar’s owner Caezar Cheung to find out what’s going on at his versatile venue.

When was D-Fusion first opened?
It’s been open for almost four years now. Like we say on the window “Eat. Drink. Sing. Dance.” That’s what people can find her. Bar, restaurant, karaoke and a nightclub. We also have a party room which can be hired in advance.

What do people hire the rooms for?
We get lots of bookings for birthday parties, corporate events, leaving parties, weddings - it’s a multi-functional room. When you hire the room you can decide what you want to use the room for. Most of the time they pick their own music - either using a DJ or a play list with their favourite types of music. For food, people can pick banquets, buffets and finger foods. As far as we are concerned what the people want we can be flexible and provide.

What kind of foods do you cover?
Well, it’s a Chinese restaurant, so we offer our speciality, which is traditional Chinese food, as well as Szechuan food from Northern China. So we offer a mix of two from our menu, plus we’ve just started doing grills as well. We open now from 5pm and serve food right up until 2am, every night.

So how does it work across the rooms?
The downstairs room opens at 5pm until 10pm as a restaurant, with the area at the side being used as a bar. After 10pm it becomes more like a bar - although we still serve food until 2am. We can also provide karaoke on the ground floor. We also have seven private VIP rooms for hire which are very cheap. We also have a piano, so we can do open mic nights.

What kind of people do you get down for karaoke?
We get a mix of students and professionals. At the moment I’d say we get about 70% Chinese people doing karaoke - especially Chinese students - and 30% English people. Karaoke is very popular in China, Japan and in all Asian countries. The main nights for karaoke are Friday and Saturday, although we also have it every other night too. We have over 20,000 songs on our new system, so there’s lots of choice! We’re going to launch a student karaoke night soon as well. A lot of our customers are very talented.

Is there any song that’s particularly popular?
No, it varies, because we have so many songs! People have their own favourites.
